#Recipe idea.

Spring in my family meant artichokes. My Ma always makes this recipe as it is a favorite of my Dad. I hope you’re inspired to do this Roman style artichoke at home and please let me know if you do. Cut the top off the artichoke. Trim all the points with scissors, even the ones inside. Put water, olive oil, lemon slices, garlic, salt and a touch of pepperoncini in a Sauté pan. About an inch of liquid. Then place the Artichoke upside down, stem up, cover, and simmer for an hour. Add more water and oil as needed. It will go grey and you will be able to scrape the under side of each leaf off and eat it. You eat it by peeling off the leaves and dragging them between your teeth. The skins edible part will scrape off the bottom of the leaf. Get some bread to dip in the juices left over and you’re eating Roman style.
