Well this is my first ever blog post. I keep things loose and fun when I cook. After my time cooking with Nonnas and Chefs I realize any recipe is a general guide and that best way to learn, is to cook. With that in mind use this and all the following ideas with all my love! #Recipe idea. I’ve been on a cabbage and bean kick lately. Why? The more I learn about Italian culinary history, plus talk to my Parents who grew up in the 30’s and 40’s I realize that the simple cooking of the home was one of simplicity, flavour and health. They cooked with the seasons.
Do a quick braise of cabbage or greens in water, in a fry pan. Then drain the water. Add olive oil, anchovies if you like, season with salt and pepperoncinni and Sautee. When the vegies start to wilt add Borlotti Beans, you can substitute for any bean you like but make sure they’re nice and starchy. Add your pasta to the pan two minutes before it’s al dente along with a splash of pasta water. Cook until pasta is al dente and the pan sauce has thickened up. That’s it.
